Mexican Wedding Cookies Recipe by Jonet Powell (UTSA Honors College Student) Ingredients List: • 1 cup butter or Crisco (softened) • 3⁄4 cup confectioners’ sugar • 1 teaspoon vanilla • 2 cups flour • 1 cup chopped nuts Steps: 1. Preheat oven to 325 degrees 2. Mix butter, confectioners’ sugar, and vanilla in a bowl 3. Gradually add flour and nuts into the bowl 4. Put parchment paper and flour on pans so the cookies do not stick 5. Form dough into 3⁄4' balls 6. Put cookies into the oven for 25 minutes *Tip: wrap the counter with plastic wrap so the cleanup is easier* 7. After taking the cookies out, put them on a cooling rack 8. While warm, roll cookies in confectioners’ sugar 9.
